KFC Style Wings

If you prefer super crispy wings that don’t get you messy, this is the recipe for you.

It’s worth noting that these are like the original recipe style, and not the spicy wing that come standard at KFC.

Ingredients

Wings & Assembly

  • 1.8kg chicken wings, wing tips removed and separated into flats and drumettes
  • 2tsp salt
  • 2tsp black pepper

 

Wet Batter

  • 1tsp Cayenne Pepper
  • 200ml Water
  • 250g Plain Flour
  • 1tsp Salt
  • 1.5tsp Paprika
  • 1 Egg

 

Dry Batter

  • 2tsp Black Pepper
  • 2.5tsp Chicken Powder
  • 1tsp White Pepper
  • 2tsp Paprika
  • 250g Plain Flour
  • 2tsp Cayenne Pepper
  • 1/2tsp Marjoram
  • 1/2tsp Ginger Powder
  • 1tsp Dry Thyme
  • 1tsp Sea Salt
  • 2tsp Garlic Powder
  • 1tsp coriander powder
  • 250g corn starch
  • 2tsp dry oregano
Preparation

Step 1

  • Cut your wings into 2 pieces and remove the wing tip. Add salt and pepper and let it dry brine in the fridge over night.

Step 2

  • Combine all ingredients to make your wet batter and dry batter. When making your wet better add the water slowly and stop when you reach a consistency you like. The thicker it is the more flour that will adhere.

Step 3

  • Dip your wings in the wet batter, remove them and let excess batter fall off before placing them in the dry flour. I usually do 2 at a time.


Step 4

  • Fry the wings in batches for 11 minutes at 164c. Allow excess oil to drain onto paper towel, serve up and enjoy.
