Lemon Pepper Wings

The Humble Lemon Pepper Wing was invented in Atlanta, Georgia as an alternating to lower the spice from the ever-popular buffalo wing.

Enter the mid-2000’s where their popularity sky rocketed not only for their unique flavour, but being less likely to cause a stain!

Ingredients

Seasoning

  • Grated Lemon Peel from one lemon
  • 1/2 tbsp Black Pepper (Preferably fresh ground peppercorns)
  • 1 tsp Sea Salt
  • 1/2 tbsp Dried Thyme Leaves
  • 1/2tbsp Garlic powder
  • 1/2 tbsp onion powder

Wings & Assembly

  • 1kg chicken wings, wing tips removed and separated into flats and drums
  • 2 Tbsp. vegetable oil (if grilling) or 1.4 litres vegetable oil (if deep-frying)
  • Sea Salt Flakes
  • 57g (4tbsp) Salted butter
  • Juice of half a lemon
Preparation

Step 1

Pre heat (Either):
– Oven: 190 degrees centigrade
– Grill: Medium
– Air Fryer: 193 degrees Centigrade

Wings & Assembly

Step 2

Mix together the dry rub seasoning: Grated Lemon peel, Ground Black Peppercorns, Salt, Dried Thyme, Garlic Powder & Onion Powder. Mix Into Melted butter.

Step 3

TO GRILL WINGS: Pat Chicken wings, wing tips removed and separated into flats and drumettes dry. In a bowl, rub 2 Tbsp. vegetable oil onto wings and season with salt. Grill wings on an oiled rack until cooked through and golden brown, 10-15 minutes on each side.

TO OVEN COOK WINGS: Pat Chicken wings, wing tips removed and separated into flats and drums dry. Place the wings on the wire rack in a single layer, ensuring they are not touching for maximum airflow. Cook for 40-50 minutes, turning once in-between.

TO AIR FRY WINGS: Pat chicken wings, Chicken wings, wing tips removed and separated into flats and drums. Place In The Air fryer basket on a single layer allowing space for air circulation. Cook at 200 degrees for 20-25 minutes. turning half way through.

In a Bowl Mix the wings into the lemon pepper butter, Serve up, and enjoy!
